Peri Peri Chicken Rice

Heat olive oil in a large pan. Add diced onion and sliced garlic (if you get massive 'bodacious' garlic, that's even better!).

Add a splash of water to help cook the aromatics.

Mix together all the spice powders: garlic powder, onion powder, coriander powder, paprika, smoked paprika, and peri peri seasoning. Add this spice mix to the pan.

Add another splash of water to help the spices cook and develop flavor.

Add fresh tomato (or tomato puree if preferred) and fresh lemon juice for that 'pure flavor'.

Add the chicken breast pieces and a pinch of salt. Note: traditionally you'd cook the chicken separately for coating and marinating, but this method makes life easier.

Add a pinch of dried oregano, dried coriander, and bell pepper. Cook until chicken is done.

Add the peri peri sauce - enough to coat everything well (4-5 tbsp).

Add rice and a tiny bit of salt for seasoning. Cook until rice is tender.

Turn off heat and garnish generously with fresh coriander on top.
Notes
You can add lemon peel using a peeler and chuck it in with the peri peri sauce for added fragrance and depth - it really makes a difference! The creator mentions having to adapt recipes for kids who won't eat spicy or too fragrant food. Two chicken breasts provide 'enough to feed a village' according to the chef.
